Using Cornish barley, St Austell Brewery makes the mash – as we distillers call it – which is similar to beer without the hops. After being double-distilled in the smallest traditional copper pot still in the country (made by the old family coppersmiths of Forsyth & Sons in Scotland), it is left to mature in our oak casks, lying side by side by our reserve brandies and cyders to develop a unique character and colour for at least seven years. The first barrel was bottled and released in 2011, each bottle individually numbered by hand, filled from a single cask, unfiltered and at cask strength. We’ve bottled England’s oldest whiskey, and more is yet to come, sleeping quietly in our cellars until it is ready to be released each year.
